Chicken recipes:
Wash 1/2 c. basmati rice until it runs clear. Boil it in salted water until it is tender but not too soft. Set it aside. As it cools a bit, add to the rice 1 tsp turmeric, 1/2 tsp curry powder , half a chopped onion, one chopped garlic clove, and a few cumin seeds (or 1/4 tsp ground cumin). Add 1/4 c. raisins. Stuff the inside of a whole chicken with the rice mixture.
Make a rub of olive oil, salt, pepper, paprika and some oregano. Rub over chicken and under the skin. Put into a baking pan with a tiny bit of water. cover and bake in oven until chicken is done (tender, but not dried out).
If you like you can also put around the chicken a few potatoes peeled and chopped and seasoned with salt and pepper, and add some sliced purple onion. Bake along with the chicken. You can throw in other vegetables too, such as carrots, parsnip, zucchini etc.
Chicken curry:
In a pan sautee one small onion and 2 cloves garlic. Add 1/2 tsp turmeric, 1/4 tsp curry powder, 1/4 tsp cumin and a bit of black pepper and some salt to taste. Add one chopped chicken breast and stir well. Add a bit of water. Then add one carrot, peeled and cut into rounds. Add half a red pepper sliced. cover and cook until done. Sprinkle on chopped scallions at the end. Serve with basmati rice.
MEAT BURGERS:
Take 1 pound of chopped meat. Add 1 grated onion and two small grated potatoes. Add salt and pepper to taste and a bit of turmeric. Grill on the bbq grill or bake in oven. Very delicious. Serve with a salad and basmati rice on the side.
MEAT STEW:
In a pan put a whole onion chopped up plus 2 cloves of chopped garlic. Add stew meat and let cook slowly with the onion for a while, stirring from time to time. Add salt and pepper and stir a bit more. Then add 2 tomatoes, grated, as well as fresh (or dried) thyme and oregano. Add some sliced carrots, chopped green beans and a bit of chopped celery if you like. you can also add a few potatoes, chopped into small chunks. Cover and cook on low until meat is tender. You may need to add a bit of water so it wont burn.
PERSIAN GHONDI
Grind 2 chicken breasts. Add 1/2 grated onion, a bit of salt, pepper and carmadom. Mix well. Add about 1/4 c. of chic pea flour. Mix and form small balls. Leave in fridge a bit and then drop into boiling chicken soup and cook until done. Serve with the soup.
